  • Mix the batter well. Do not add salt. Check for consistency of batten It should be pourable. If needed add little water and mix well.
  • Pour a big ladle of batter onto a medium hot pan and spread in circular motion towards the outer edge to form a uniform round shaped dosa.
  • Pour approx 1 tbsp oil or ghee on the sides and leave for 1 minute. Gently remove from the side and turn it over for a crispy uttapam.
  • For Uttapam, sprinkle a mixture of finely chopped onion, tomatoes, coriander leaves and green chillies. Then turn it over and let it brown. Serve it hot.

Mini Cheese Uttapa recipe

  • Heat a mini uttapa pan and grease it using a oil.
  • Pour a small spoonful of the batter in each of the 7 uttapa moulds and spread in a circular motion to make a 75 mm. (3") diameter round.
  • Sprinkle 2 tsp of the topping (3/4 cup grated processed cheese, 2 tsp finely chopped green chillies) evenly over each of the 7 mini uttapas and press it gently so that the topping sticks well to the batter.
  • Cook the uttapas, using oil, till they turn golden brown in colour from both the sides.
  • Repeat steps 1 to 4 to make 1 more batch.
  • Serve immediately with sambhar and coconut chutney.
